Pancakes are one of my favorite things to make for the kids
in the morning before school
something small, warm, and filling
that’s fun to start the day with.
I’ve also been trying to create slower and calmer mornings at home lately, not just healthier ones.
I actually shared a few of those small habits in this post.




Here’s what you need
⏱ Prep time: about 15 minutes
🍽 Makes about 15–20 small pancakes
Ingredients
1 cup oat flour (you can grind oats at home)
1/2 cup almond flour
1 teaspoon baking soda
1 packet baking powder
1/2 banana (you can barely taste it, it just adds texture)
1 cup almond milk / oat milk (or any milk you prefer)
2 eggs
3 tablespoons coconut sugar / natural maple syrup, or another natural sweetener
Instructions
- Mix all the ingredients in a bowl until you get a smooth batter.
- Heat a pan and cook small pancakes until golden on both sides.


I like to add on top:
maple syrup, fresh fruit, or a bit of yogurt on the side.
You can also add banana slices, nuts,
or just leave it as it is.
